Chios Mastiha, also known as mastic, is a natural aromatic resin extracted from the mastic tree (Pistacia lentiscus var. Chia). The product is traditionally cultivated in southern Chios and has a Protected Designation of Origin (P.D.O./SGB).
When the mastic tree is scored, small, transparent drops of resin form and slowly harden into the characteristic “mastic tears.” This package contains Small Tears—small mastic crystals that are convenient for use in both cooking and baking.
Mastiha has a very distinctive aroma: fresh, herbaceous, slightly woody, and resinous, with that characteristic flavor strongly associated with Chios.

Mastiha has an intense and distinctive aroma with fresh herbal notes, pine/resin, and light citrus-like undertones. Since the aroma is concentrated, only a small amount is usually needed.
Usage
Pairs well with Greek desserts, ice cream, baked goods, bread, cookies, creams, coffee, and other beverages. Mastiha can also be ground into a powder before use. A classic trick is to grind the crystals together with a little sugar to make them easier to pulverize.
