Authentic Chios Mastiha, medium size—a unique natural product from the Greek island of Chios.
Chios Mastiha is a naturally aromatic resin from the mastic tree (Pistacia lentiscus var. Chia). When the tree is incised, drops of resin form and slowly harden into the characteristic mastic tears.
This variety consists of Medium Tears, which are larger, carefully selected pieces of mastic than Small Tears. The package contains 20 g and comes in the distinctive metal tin from The Chios Gum Mastic Growers Association.
Chios Mastiha has a Protected Designation of Origin (P.D.O.) and is strongly associated with traditional mastic cultivation in southern Chios.

Taste & aroma
Mastiha has a very distinctive, fresh, and aromatic flavor with herbal, resinous, and slightly woody notes. The flavor is concentrated, so a small amount is usually sufficient.
Usage
Medium Tears can be chewed directly as natural mastic, but are also used in cooking and baking.
They pair especially well with ice cream, pastries, cookies, bread, creams, desserts, coffee, and other beverages.
When baking or cooking, the mastic pieces can be ground into a fine powder. A classic method is to grind them together with a little sugar, which makes them easier to pulverize.
From Chios—and nowhere else
Genuine Chios Mastiha P.D.O. comes from the mastic trees on the Greek island of Chios. Production is particularly associated with the villages in the southern part of the island, the so-called Mastichochoria—the mastic villages—where knowledge of cultivation and harvesting has been passed down through generations.
